The Korean rice cake is made from rice flour, wheat flour, and other types of flour (tteok). For stir-fries, soups, and stews, the rice cakes are often steamed before being sold freshly. In North America, it can be difficult to find fresh rice cakes. However, Asian or Korean grocery stores still have packages of rice cakes in the refrigerator. Even when they are not fresh, every recipe you use them in still tastes delicious!


The rice cake, or tteokbokki in Korean, comes in a variety of shapes and sizes. Two of the most common shapes are the sliced rice cakes, or tteok, and the long cylindrical rice cakes, or garage-tteok. The cylinders are preferred since they tend to be more robust and hold up well to cooking. the ideal for stir-fries normally clings together less than the sliced version. But I prefer using the sliced type because it cooks much more rapidly and lets you eat your meal more quickly.


Tteokbokki in the making:

It is a good idea to pre-soak rice cakes in water before cooking them, especially if they are a sliced form. Rice cakes are frequently vacuum-sealed when they are packaged, but occasionally they can stick together. Soak the rice cakes to help them separate and rehydrate more rapidly. When cooking the rice cakes in a stir-fry like this, it's also a good idea to stir them about every 2 minutes. Even if you use non-stick, food will still often stick to the bottom of the pan and to each other. Visit this restaurant after work to chill.
